In the mid-1800s, settlers from the Alsace region of France (near the German border) moved to the banks of the Medina River to establish Castroville. They brought with them a unique architecture, a distinct dialect, and—most importantly—their incredible baking traditions. Haby’s Alsatian Bakery has been keeping those traditions alive since the Haby family first opened the doors in 1974.

Located on the main drag (US Highway 90), Haby’s is more than just a bakery; it’s a cultural landmark. It serves as a reminder of the diverse European "pockets" that helped shape the Texas Hill Country. Travelers heading west from San Antonio have made it a tradition for decades to pull over and stock up on treats before hitting the long, open stretches of road toward Del Rio or Big Bend.

The wooden display cases are packed with a dizzying array of items: fruit-filled danishes, intricately braided breads, massive cookies, and their famous Alsatian-style pastries. They are particularly well-known for their Apple Strudel and Fruit Turnovers, which use recipes that feel like they’ve been passed down for generations.

But it’s not just about the sweets. Haby’s also produces incredible fresh breads, from crusty French loaves to dense pumpernickel. It is a no-frills, authentic operation. You won't find over-the-top "Instagram" decor here; instead, you find local bakers in flour-covered aprons working tirelessly to keep the cases full for the steady stream of locals and tourists.

If you're visiting on a Saturday morning, be prepared for a crowd—but don't let the line out the door scare you; the staff works with military precision and moves people through quickly. Our absolute must-buy recommendation is the "Apple Fritter." It is massive, perfectly glazed, and arguably one of the best in the state. Also, take your treats a few blocks over to the Medina River Park for a picnic under the cypress trees—it’s the perfect way to soak in the Castroville atmosphere.

Note: Haby’s is closed on Sundays, so make sure to get your pastry fix on your way out of town Friday or Saturday!
